Salad is one of my all-time favorite meals. Especially when the add-ons include a good piece of chicken breast, pecans, a tangy balsamic dressing, fruit, and a delicious mix of chopped veggies. The great thing about this recipe is the versatility, and it’s also a great excuse to clean out the fridge. The homemade dressing consisting of olive oil, balsamic vinegar, and a few spices is both tangy and a little sweet. It doubles as a marinade for the chicken or even a tasty dip for crusty bread. I typically make enough to keep on hand. Mix it and store in a mason jar. Give it a little shake, and it’s all ready to go again. Some possible variations on this dressing could be the addition of orange zest, lemon juice, honey, and even crushed red pepper. For the salad, add seasonal fruits like blueberries, strawberries, apples, and blackberries. Some great cheeses like goat, feta, or blue would be extra tasty! I like a mixture of greens; starting with a foundation of romaine hearts. Transfer this salad to a whole wheat pita or wrap for on-the-go meals. Just don’t forget the delicious dressing for dipping!

RECIPE:


For the salad:

2 cups cooked chicken breast

4 cups chopped romaine hearts

1 cup small lettuces ( arugula, butter, or spinach)

1/2 cup chopped mushrooms

1 cup fruit, diced  (apples, blueberries, strawberries, blackberries)

1/4 cup sunflower seeds

1 cup chopped pecans

1/4 cup green onions

1/2 cup cheese (goat, blue, feta, parmesan)

1 cup cucumber, diced

1 cup Extra-Virgin Olive Oil

1/3 cup Balsamic Vinegar

1 tablespoon Italian seasoning

coarse salt and ground pepper

METHOD:


1. Combine oil, vinegar, Italian seasoning, and salt/pepper by shaking vigorously in a tightly sealed Mason Jar.

2. Place chicken breast in a plastic bag and pound with a meat mallet or rolling pin. Add roughly 1/4 cup of the dressing to the bag. Allow to sit and marinate 5-10 minutes.

3. Heat 1 tablespoon olive oil in a skillet over medium heat. Place chicken into the skillet and cook; turning once, until juices run clear. Remove from heat and slice.

4. Assemble lettuces in a large bowl and top with chopped vegetables, fruits, nuts, and cheeses. Drizzle with a ample amount of dressing; toss well to combine. Top with chicken slices and serve.
