Popsicles are like the undisputed symbol of summer and all things deliciously frozen. Cool off this summer by skipping the artificially flavored grocery store varieties and make them at home. Any number of combinations can be imagined using the in-season fruits of the hot months. But my all time favorite is juicy peach with just a bit of fragrant lavender and sweet honey that’s just to die for. When cooking with lavender it’s best to stick with culinary varieties such as Lavender Angustifolia, also known as “English Lavender” or “Munstead”. Skip the fancy mold and use small paper cups as a mold with classic wooden popsicle sticks for holding. Serve in a stem wine glass, and garnish with just a little more lavender. To really add a refreshing element and create an elegant cocktail; pour just a splash of champagne or prosecco into the glass just before serving!

RECIPE: yields 6 popsicles


3 medium peaches, skin removed and chopped

1/2 cup sour cream

2 teaspoons vanilla extract

1 dash Angostura Bitters, optional

1 teaspoon chopped lavender

METHOD:


1. Peel peaches, remove pits, and chop into small pieces. Place peaches in a medium bowl  with the remaining ingredients. Gently fold to combine.

2. Spoon mixture into small 3oz or 6oz Dixie cups and place wooden sticks into the center. Place cups on a muffin tin and transfer to the freezer. Freeze overnight.

3. Remove popsicles from the freezer immediately before serving. To release from the cup molds, gently grasp the popsicle in one hand for a few seconds. Twist and remove by holding the stick. Serve in stemmed wine glasses with a lavender sprig or a splash of champagne.
