Mashed Sweet Potatoes

RECIPE: MASHED SWEET POTATOES


Mashed Sweet Potatoes

INGREDIENTS: serves 8

6 medium or large sweet potatoes

3/4 cup heavy cream

1/4 cup sour cream

1/2 cup butter

2 tablespoons chopped rosemary

1 tablespoon chopped thyme

1 tablespoon chopped parsley

1 teaspoon pepper

1 teaspoon salt

1 teaspoon granulated garlic


METHOD:

1. Bring sweet potatoes to a boil in a large stock pot over medium-high heat. Boil 25-30 minutes or until fork tender. Remove from water and allow to cool. Once cool, remove the skin by peeling gradually away from the potato.
