RECIPE: SERVES 4-6


6-8 large eggs

1/4 cup fat-free milk

2 Tbsp olive oil

1/2 cup shredded cheese: Parmesan, Cheddar, or Gruyere 

1/2 cup finely chopped onion or scallions

1 cup spinach

1 cup tomato, chopped

3/4 cup mushrooms, chopped

1 cup roasted sweet potato, or 1 baked potato

1/2 cup Brussels sprouts

METHOD:


1. Preheat oven to 375 degrees. Heat olive oil in a large oven proof skillet over medium-high heat. Add onions, and Brussels sprouts. Cook for several minutes until onions are soft and a bit golden. Add mushrooms, sweet potato, and spinach. Cook until spinach is slightly wilted. Season with salt and pepper. Throw in the tomatoes, and stir will to combine.

2. Meanwhile, whisk together eggs and milk until frothy. Add in herbs, cheese, and Chia seeds. Sprinkle with salt and pepper; give it a good whisk.

3. Evenly distribute veggies in the bottom of the skillet, Carefully transfer the egg mixture to the skillet. Cook over medium-high heat for 30-45 seconds until the bottom of the egg mixture is “set” and top remains runny.
